they may not be easter eggs, but I guarantee you they're just as yummy!
i love making sweet treats for my family instead of purchasing the usual eggs... last year i baked hot cross bun cupcakes with hidden chocolate centres and they were a huge hit! this year i decided to make chocolate truffles... will have to wait and see if they're as successful!
the recipe is pretty simple:
125g margarine
250ml icing sugar
100ml cocoa powder
1 packet crushed marie biscuits
125ml smooth apricot jam
5ml vanilla essence
coconut
~ cream the margarine
~ sift the icing sugar and cocoa powder and add to the margarine
~ mix
~ add the crushed marie biscuits, apricot jam and vanilla essence
~ mix
~ roll into balls and cover with coconut
~ store in the fridge
and voila!
for the labels i decided to use our precious baby boy as the model. isn't he just the cutest!
pack the truffles in a little box, add some twine and a button and you have a yummy gift made with love, for your loved ones!
